InstaLOD's remesher constructs a mesh and generates UVs for it in the process. Maintaining the original input UVs is therefore not possible due to the mesh being made up of completely different polygons. As there is no direct relation between the polygons of the original and the reconstructed mesh, the original UVs can't be transferred.
If a custom UV layout is required after a remesh, it can be generated manually in a new UV set. The textures that are baked during the remesh can be transferred onto the newly generated UV set using the 'Transfer' mode in the 'Material Merge' feature.
